From Publishers Weekly:
In this useful book, Finsand, author of The Diabetic Cookbook and two other cookbooks for diabetics, has come up with more than 150 recipes for adding fiber to the diet without disrupting one's usual regimena matter of crucial importance to the diabetic. Each recipe is analyzed for calorie count and diet exchanges; they range from breakfast to desserts, with such diverse examples as crisp French toast, Irish whole-wheat soda bread, apple Indian pudding and a mouthwatering selection of homemade stews, sausages and casseroles. Many of the recipes have been contributed by various food companies and unabashedly plug their productsnothing to complain about, usually, but in the case of these carefully analyzed recipes, one isn't always sure what products can be safely substituted.
