The Search For Food Breakthroughs (Science Quest)

Gr. 4-7. Food science is the focus of this volume in the Science Quest series, which brings science into everyday life. Twist briefly defines the job of a food technologist and then explains some of the things that the food industry does to make what we eat safe and palatable. Processing, preserving, flavoring, food substitutes, fortified foods, protein substitutes, and prepared foods each get a double-page chapter comprising three or four paragraphs of text, some sharp color photos, and a "science snapshot" of an interesting detail about the subject at hand. The "Case Study" sections at the back of the book look at specific food production techniques. There's not enough for report writers here, but there are plenty of intriguing facts to go with a very attractive format. The lengthy glossary is a plus, but curious kids won't find any resources to help them learn more. Too bad. Stephanie Zvirin
